The most classic version of the tart but in a gluten-free version! We suggest it with apricot-flavored jam, but strawberry, orange, berry jam will be great too!!!

- Cut the soft butter into a bowl and add the sugar. Whip with the aid of an electric whisk until the mixture is creamy and clear.
- Add the whole egg and when it is completely absorbed add the yolk and continue kneading.
- When the dough is perfectly blended, add the flour and pinch of salt. Incorporate everything with a spatula. Add the grated peel, mix, and pour the mixture onto a surface.
- The dough will be soft, so with the help of a little flour, sprinkle the work surface, flour your hands, and form into a square loaf.
- Wrap with plastic wrap and let rest in the refrigerator for at least 2 hours (you can also make the dough the night before and leave in the refrigerator overnight).
- After the 2 hours have elapsed, butter and flour your tart mold.
- Flour your work surface and rolling pin and roll out your loaf to a thickness of about 5 mm. Place it in the mold, fit tightly, and wipe off any excess dough. Prick the entire base with the tines of a fork.
- At this point, pour the apricot jam (which you can substitute with any jam you prefer) over the base of the tart, leaving 1 cm from the edge so that the jam does not spill out and burn during baking.
- Cut strips to decorate the tart and place them on top of the jam.
- If you cannot cut the strips perfectly, it is because your dough got too warm, so put it back in the refrigerator and proceed when it is well chilled.
- After you have finished decorating with your shortbread strips, let them rest again in the refrigerator for 20 minutes.
- Preheat the oven to 180 °C and bake the tart fresh out of the refrigerator for about 40 minutes.
- The tart is cooked when it appears golden brown on the surface. Take out of the oven and let it cool before unmolding.
