Swiss Chard Zucchini Tomato Strata
A strata is a layered casserole that contains eggs, cheese, and other goodies. This gluten-free, low FODMAP strata is packed with good-for-you veggies, making it a filling main course for your next breakfast or brunch.
- Lightly oil a medium baking dish.
- Cut or tear bread into 1-inch pieces.
- In a large bowl, whisk eggs until well beaten. Whisk in milk and cheese.
- Add bread cubes, Swiss chard, zucchini, tomatoes, chives, salt and pepper. Stir well.
- Transfer mixture to prepared baking dish.
- Cover and refrigerate 6 hours or overnight.
- Preheat oven to 375 degrees F.
- Bake strata, uncovered, 50 minutes or until lightly browned and set.
