Grilled Asian Pork & Cucumber Sandwich with Pickled Red Onions

Looking for a new and different sandwich? Try this Asian Grilled Pork & Cucumber Sandwich. Its intense Asian barbeque flavour pairs beautifully with cucumber slices and Picked Red Onions. It’s just as tasty as it looks!

- Mix Hoisin sauce, soy sauce, honey, ginger, sesame oil, pepper sauce and garlic in medium bowl.
- Measure out ¼ cup mixture and place in small bowl; cover and place in refrigerator.
- Pour remaining mixture into large resealable plastic bag.
- Add pork to bag. Seal tightly and massage bag to coat pork with marinade. Place in refrigerator to marinate for 4-6 hours.
- Preheat grill to medium high.
- Remove pork from marinade; discard remaining marinade.
- Grill pork 3-4 minutes on each side or until done. Cooking time will vary depending on thickness of pork chops.
- Slice pork and divide among ciabatta rolls.
- Drizzle pork with the reserved ¼ cup Hoisin sauce mixture. Top with cucumber slices, scallions and pickled red onions.
For the Picked Red Onions
- Place onions in a 16-ounce jar.
- Mix vinegar, water, sugar and salt in small saucepan.
- Place saucepan over low heat and stir until sugar and salt dissolve. Cool.
- Pour vinegar mixture over onions in jar. Cover and refrigerate at least 2 hours or overnight.
