Whether you’re craving something sweet, savory, or both, these easy-to-make, hearty breakfasts are perfect for fueling your day — all while keeping you cozy and gluten-free.

1. Sausage & Gravy Breakfast Pizza 

Who says you can’t have pizza for breakfast? This isn’t a boring breakfast pizza, either. It’s topped with fluffy scrambled eggs, cheese, and bubbling sausage gravy.

Ingredients

  • 1 Schär Pizza Crust
  • 3 large eggs
  • 2 tablespoons heavy cream
  • ½ teaspoon salt
  • ¼ teaspoon fresh cracked pepper
  • 1 tablespoon butter
  • 1 ½ cups shredded cheddar cheese (certified gluten-free)
  • 1 cup prepared sausage gravy (certified gluten-free gravy or make your own)
  • Scallions, thinly sliced

Instructions

  1. Preheat the oven to 350°F and place the pizza crust on a parchment-lined baking sheet.
  2. In a small bowl, whisk together the eggs, heavy cream, salt, and pepper.
  3. Melt the butter in a large nonstick skillet over medium-low heat.
  4. When the pan is hot, pour in the eggs and cook for 1 minute without stirring.
  5. Using a spatula, scrape the cooked edges of the egg toward the center of the pan.
  6. Cook for 2-3 minutes, stirring occasionally, until the eggs are set but still fluffy.
  7. Stir 1 cup of shredded cheese into the eggs then spread the mixture over the pizza crust.
  8. Spoon dollops of sausage gravy over the eggs then sprinkle with the remaining cheese.
  9. Bake the pizza until the sausage gravy is bubbling and the cheese melted.
  10. Garnish with sliced scallions and serve hot.

2. Spinach and Sun-Dried Tomato Breakfast Sandwich

Just the thought of this gourmet breakfast sandwich will have you eager to get out of bed in the morning. Feel free to swap out the sourdough bread for another gluten-free option (like Artisan Baker White Bread or even Multigrain Ciabatta).

Ingredients

  • 2 tablespoons softened butter, divided
  • 1 large egg
  • Salt and pepper
  • 2 slices Schar Deli Style Bread
  • 2-3 tablespoons pesto
  • ¼ cup sun-dried tomatoes, drained and chopped
  • ½ cup fresh baby spinach
  • 2 slices Havarti cheese 

Instructions

  1. Heat a medium skillet over medium heat then add 1 tablespoon butter.
  2. Crack the egg into the melted butter and season with salt and pepper.
  3. Fry the egg to your preferred level of doneness then remove from the skillet and keep warm.
  4. Spread one side of each piece of bread with softened butter.
  5. On the other side of each bread slice, spread a layer of pesto and sun-dried tomatoes.
  6. Between the slices, layer the fried egg, spinach, and cheese.
  7. Reheat the skillet over medium-low heat.
  8. Add the sandwich to the skillet and cook until the bread is toasted on one side.
  9. Carefully flip the sandwich and cook until the other side is toasted, and the cheese is melted.
  10. Cut the sandwich in half and enjoy immediately. 

3. Blueberry Muffin Breakfast Casserole 

If you’re not much of a baker, you can still enjoy a delicious breakfast casserole using gluten-free muffins from Schar. Better yet, prepare the casserole overnight so you only have to throw it in the oven the next morning.

Casserole Ingredients

  • 8 Schär Classic Muffins
  • ½ cup fresh blueberries
  • 1 (8-ounce) package mascarpone cheese, softened
  • 1 cup milk (or almond milk)
  • 4 large eggs
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract

Blueberry Syrup Ingredients

  • 1 cup water
  • 1 cup fresh blueberries
  • ½ cup white sugar

Instructions

  1. Preheat the oven to 350°F and grease an 8x8-inch baking dish with cooking spray.
  2. Cut the muffins into large chunks and spread them evenly in the bottom of the pan.
  3. Sprinkle in the blueberries as evenly as possible.
  4. In a medium bowl, whisk together the mascarpone cheese, milk, eggs, cinnamon, salt, and vanilla extract until well combined.
  5. Pour the mixture over the muffins and blueberries.
  6. Gently press the muffin pieces with a wooden spoon to ensure they soak up the liquid.
  7. Bake for 45-50 minutes until the top of the casserole is lightly browned.
  8. Meanwhile, prepare the blueberry syrup by heating the water, blueberries, and sugar in a medium saucepan over medium-high heat.
  9. Bring the mixture to a low boil and cook for 10 minutes, stirring occasionally.
  10. When the syrup is thickened, remove from heat to cool slightly.
  11. When the casserole is finished, let it cool for 5 minutes in the pan then serve drizzled with the hot blueberry syrup.

4. Open-Faced Everything Bagel Sandwich

When you can’t make up your mind what fillings to include in your breakfast sandwich, just make it open-faced! Then you’ll have room for everything (though you might need a fork and knife to eat it!).

Ingredients

  • 4 slices bacon (look for bacon labeled gluten-free)
  • 1 tablespoon butter
  • 2 large eggs
  • Salt and pepper, to taste
  • 1 Schär Everything Bagel, halved
  • ½ avocado, sliced thin
  • 1 cup fresh baby arugula
  • 2 slices tomato
  • 2 slices cheese (your choice)

Instructions

  1. Cook the bacon until crisp in a large skillet over medium heat then transfer to paper towels to drain.
  2. Wipe the skillet clean and reheat over medium heat with a tablespoon of butter.
  3. When the pan is hot, crack the eggs into the skillet and season with salt and pepper.
  4. Fry the eggs to your liking (a runny yolk is best) then remove to a plate and cover to keep warm.
  5. Toast the bagel halves and place them cut-side up on a plate.
  6. Arrange slices of avocado on each half then top with arugula, bacon, tomatoes, and cheese.
  7. Set a fried egg on top of each half.
  8. To enjoy, cut into the egg and let the yolk soak into the ingredients below.

5. Bacon-Stuffed Croissants 

Perhaps the only thing better than a warm croissant is one stuffed with cheese and bacon. Turn premade gluten-free croissants into the breakfast of your dreams with this easy recipe.

Servings: 2-4

Ingredients

  • 1 package Schär Croissants
  • 4 slices bacon
  • 4 large eggs
  • 2 tablespoons milk
  • Salt and pepper, to taste
  • 1 tablespoon butter
  • ¾ cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with foil.
  2. Use a serrated knife to slice into the top of each croissant.
  3. Tear out some of the croissant filling to make space, taking care not to tear a hole in the bottom or sides.
  4. Place the croissants on the baking sheet and prepare the filling.
  5. Cook the bacon in a medium skillet until crisp then drain on paper towels and crumble when cool.
  6. In a medium mixing bowl, whisk together the eggs, milk, salt, and pepper.
  7. Wipe the skillet clean then add the butter and melt medium heat.
  8. When the butter is melted, pour in the egg mixture and let it cook for 1 minute.
  9. Using a spatula, push the cooked edges of the egg into the center.
  10. Cook for 1 minute more than fold in the cheese and crumbled bacon.
  11. Before the mixing sets, spoon it into the croissants.
  12. Bake for 15-20 minutes until the egg mixture is set and the cheese melted.
