Festive Turkey Burger with Cranberry Ketchup

Preparation
To make the cranberry ketchup:
- Place all the ingredients for the cranberry ketchup in a pan and bring to a gentle simmer.
- Cook until the mixture has reduced by one-third.
- Leave to cool.
- You can blend it to a smooth consistency if desired.
To make the turkey patties:
- Mix together the onion, cranberry and turkey mince.
- Divide into four patties and reserve in fridge until needed.
To make the stuffing patties:
- Heat the oil in a frying pan over medium heat, add the onion, and sauté for 5 minutes or until soft.
- Then add the sage and season with salt and pepper.
- Once the mixture is completely cool, place it in a bowl and add the remaining ingredients.
- Mix until well combined, then divide the mixture into 4 patties.
To cook the patties you can pan fry or oven bake until they are cooked through and piping hot.
Assemble the burger:
- Toast the sliced burger buns.
- On the bottom half of the bun, spread a layer of mayonnaise, then add shredded sprouts, the turkey patty, cranberry ketchup, the stuffing patty, more cranberry ketchup, cooked bacon, and finally the top bun.
