When baking in a fan oven, water vapour is best produced by placing a second baking tray or an old metal baking pan on the oven floor during pre-heating to heat it up. When putting your baking products in the oven, add 100-200 ml of water (depending on the size of the pan) to the baking pan or baking tray and quickly close the oven door. This will create water vapour, which will settle on your baking products and give them the perfect look and level of crispiness. Never place a pan already filled with water in the oven during pre-heating - the baking climate will become too humid and your baked product will not turn out well.
