"My work is based in the Area Science Park in Trieste at the Dr. Schär R&D Centre, a centre of excellence in the field of scientific research where highly qualified people work in a variety of scientific and technical disciplines. Created in 2003, our R&D centre is primarily concerned with high quality gluten-free raw materials and the development of new products and recipes.

Guided by the enlightened vision of Dr Virna Cerne - Senior Director of Global Research & Development, I find myself working in an environment every day where gender balance is a lived reality, with a team of 16 women and 16 men.”

Raw Material Research Activity

“My role within the Research and Innovation group in applied research involves a range of exciting activities - from developing new formulations for our products and solving recipe problems to providing cross-departmental support to colleagues in other departments with my expertise on the specific properties of various raw materials.

A large part of my day is spent in the bakery, namely our laboratory. Here, I work with 1kg doughs, the classic bread format commonly made at home, but relying on much more advanced equipment - professional mixers, leavening cells and various types of ovens. I concentrate on experimenting with a variety of recipes using different raw materials. The goal? Finding that perfect alchemy between fibre and flour that makes for a good gluten-free bakery product.

And when it comes to gluten-free, you know, the challenge is even more difficult!”

Not only all about ingredients

“For the purpose of innovation, the areas of development and improvement are those concerning flavour and texture. Whether it is the aroma, the softness of the crumb or the crispness of the crust: these are the aspects on which we work to offer the best.

I explore new ingredients, such as cereal flours or pulses to improve the flavour, bearing in mind that the production process can also help in this respect (think, for example, of the different temperatures used to create baked goods). But it is not just a question of ingredients: for the structure of a product, technology plays a crucial role, allowing us to fine-tune the final texture of our products: for example, a biscuit dosed with a sac à poche will have a decidedly different final consistency than one cut with a wire-cutter. It's all about finding the right combination for each product: and in this the R&D department plays a really important role! I would never change my job. In these 15 years at Schär I have had great professional and personal growth and I am doing research that is also made stimulating by the presence of so many young people who are motivated by enthusiasm, a desire to do and get involved. But what makes my job deeply rewarding is knowing that every small improvement achieved goes towards making life more pleasant for people who eat gluten-free.

Of course, it is essential for us to offer safe and nutritionally satisfying products. But every day, my commitment is fuelled by passion and the desire to exceed consumers' expectations, giving them truly satisfying and surprising taste experiences, whether for a meal or just a snack.”

Study on the fragrance of bread - the many virtues of sourdough

One of the most recent projects, on which Laura is working, is a project on new breads to develop a more interesting flavour: this involves studying new sourdoughs to add to the dough and testing various ways to come up with a new bread variant that is even better from an aromatic point of view but not only. Commonly referred to as mother yeast, sourdough is a mix of flour and water that naturally triggers fermentation, helping to create great bread. Different sourdoughs serve to distinguish notes of flavour and aroma, improve shelf life and maintain softness over time, help with aroma and taste and also add nutritional value to the baked product.
