This is usually served wrapped in bamboo leaves -  but it could also be just as a side dish for Christmas and New Year's dinner.

2 tsp
sesame oil
garlic cloves, minced
2 (thinly sliced, separate the white parts from the green parts)
spring onions
5 (Chinese, cut into slices diagonally)
3-4 (dried)
shiitake mushrooms
1 pound (sticky)
For the sauce:
4 tbsp (Shaoxing)
4 tbsp
gluten free soy sauce
1 tbsp
oyster sauce
2 tsp
sesame oil
1 tsp
1/2 tsp
white pepper

  • Cook the rice in a rice cooker. Keep warm.
  • In a wok/frying pan, heat sesame oil on high heat. Saute garlic and white parts of scallions until fragrant, about 2 to 3 minutes. Add Chinese sausages and stir for 1 minute. Add shiitake and stir for 1 minute.
  • Pour sauce ingredients into the wok/pan and cook for 2 minutes.
  • Turn off heat and add the cooked rice and stir until everything is well mixed. Add the 2 cups of shiitake soaking liquid (shiitake soaked in 2 cups of hot water until soft and puffed up, cut into thin slices and reserve the soaking liquid) as need to make the rice mixture soft.
  • When ready to serve add the green parts of the scallions.
