1. Popcorn

No movie night would be complete without popcorn. Good thing it’s gluten-free! Throw a bag of popcorn in the microwave or, if you’re feeling fancy, pop some on the stove. Dress it up with tasty toppings like melted butter, garlic powder, or parmesan cheese. 

2. Homemade Snack Mix

1. Bacon-Wrapped Chicken Skewers

Serves: 4

Ingredients

  • 1 ½ pounds chicken tenders, cut into 1-inch strips
  • Salt and pepper
  • 1 ½ cups buttermilk
  • 4 green onions, coarsely chopped
  • 2 cloves minced garlic
  • ½ pound bacon, strips halved lengthwise
  • Wooden skewers (soaked in water for 30 minutes)

Instructions

  1. Season the chicken strips with salt and pepper then place them in a zippered freezer bag.
  2. Add the buttermilk, green onions, and garlic then shake to coat. 
  3. Chill for 12-24 hours. 
  4. Drain the chicken and wrap each strip in a slice of bacon.
  5. Thread the chicken onto skewers, securing the bacon at either end.
  6. Preheat the grill (or stovetop grill pan) to medium heat and grease the grates with oil.
  7. Add the skewers and cook for 8-10 minutes, turning often, until the chicken is cooked through and the bacon crisp.
  8. Serve with your favorite dipping sauce (or an assortment). 

2. Classic Bruschetta

Ingredients

  • ¼ cup olive oil
  • 4-5 cloves minced garlic
  • 8 small Roma tomatoes, diced
  • ¼ cup grated parmesan cheese
  • ¼ cup fresh chopped basil
  • 1 tablespoon balsamic vinegar
  • ¾ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Heat the oil in a small skillet over medium-low heat.
  2. Add the garlic and cook for 1 minute until golden brown, stirring often.
  3. Remove from heat and let cool then transfer to a large mixing bowl.
  4. Add the tomatoes, parmesan, basil, balsamic vinegar, salt, and pepper. 
  5. Toss well to combine and serve with toasted slices of gluten-free baguette. 

3. Jalapeno Popper Dip

Serves: 12

Ingredients

  • 1 (8-ounce) package cream cheese, softened
  • 1 cup sour cream
  • 1 teaspoon garlic powder
  • ½ cup finely chopped jalapeno
  • 2 cups shredded cheddar cheese
  • 1 cup shredded parmesan, divided
  • 1 cup Schär gluten-free breadcrumbs
  • 4 tablespoons butter, melted
  • 1 tablespoon fresh chopped parsley
  • Gluten-free crackers or chips

Instructions

  1. Preheat the oven to 375°F.
  2. Stir together the cream cheese, sour cream, and garlic powder in a mixing bowl until well combined.
  3. Fold in the shredded cheddar, jalapenos, and ¾ cup of the parmesan.
  4. Spread the mixture evenly in an 8x8-inch square baking dish.
  5. In a small bowl, combine breadcrumbs, butter, parsley, and the remaining parmesan cheese.
  6. Sprinkle over the jalapeno mixture in the dish.
  7. Bake for 15-20 minutes until the dip is hot and the topping browned.
  8. Serve with gluten-free crackers or chips for dipping.
