1. Garlic Herb Butter Sauce 

Servings: 4

Ingredients

  • ¼ cup salted butter
  • ¼ cup extra-virgin olive oil
  • ½ cup minced garlic
  • ¼ cup fresh chopped basil
  • ¼ cup fresh chopped parsley
  • Grated parmesan cheese

Instructions

  1. Heat the butter and oil in a skillet over medium-low heat. 
  2. Cook for 2-3 minutes, stirring often, until the garlic is softened but not browned.
  3. Stir in the parsley and basil then cook for 1-2 minutes until fragrant.
  4. Spoon the sauce over your choice of cooked gluten-free pasta and toss to coat.
  5. Garnish with freshly grated parmesan cheese to serve. 

2. Creamy Tomato Sauce

Ingredients

  • 2 tablespoons olive oil
  • ¼ cup salted butter
  • 1 medium yellow onion, chopped
  • 5 cloves minced garlic
  • ¾ teaspoon black pepper
  • ½ cup tomato paste
  • 1 ½ cups heavy cream
  • ½ cup grated parmesan 
  • 2 tablespoons fresh lemon juice
  • Salt to taste 

Instructions

  1. Heat the oil and butter in a large, deep skillet over medium-high heat.
  2. Add the onions and stir to coat with oil then reduce heat to medium-low.
  3. Cook for 4-5 minutes until softened then stir in the garlic and pepper.
  4. Reduce heat if needed to prevent browning and cook for 1-2 minutes until fragrant.
  5. Stir in the tomato paste and cook for 60-90 seconds.
  6. While whisking constantly, drizzle in the cream followed by the lemon juice.
  7. Add the parmesan a few tablespoons at a time, stirring well after each addition. 
  8. Drain your cooked pasta, reserving ¼ cup of the cooking water, and add the pasta to the skillet.
  9. Stir in the reserved cooking water and let the sauce simmer for 1-2 minutes to thicken.
  10. Adjust seasoning to taste and serve hot. 

3. Vegan Bolognese Sauce

Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, chopped
  • Salt and pepper
  • 1 (10-ounce) package sliced mushrooms
  • 3 cloves minced garlic
  • ½ teaspoon crushed red pepper flakes
  • ¼ cup tomato paste
  • ½ cup dry white wine
  • 1 cup dry red lentils 
  • 1 (15-ounce) can crushed tomatoes
  • 2 cups water

Instructions

  1. Heat the oil in a large, deep skillet over medium heat.
  2. Add the onion and season with salt and pepper.
  3. Cook, stirring occasionally, for 3-4 minutes until softened.
  4. Add the mushrooms then increase the heat to medium-high.
  5. Cook for 8-10 minutes, stirring occasionally, until browned.
  6. Reduce the heat to medium and stir in the garlic and red pepper flakes—cook for 60 seconds.
  7. Add the tomato paste, stir well, then cook for 2 minutes.
  8. Pour in the wine and let it simmer for 30 seconds then scrape up the browned bits in the pan.
  9. Stir in the lentils, tomatoes, and water then bring to a boil.
  10. Simmer for 30-35 minutes until the lentils are tender.
  11. Serve the sauce over cooked gluten-free spaghetti and garnish with parsley.

4. Spicy Marinara with Anchovy

Servings: 4

Ingredients

  • ¼ cup olive oil
  • 4 anchovies, drained and chopped
  • 3-4 cloves minced garlic
  • 1 small red chile, sliced thin
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons capers, drained and chopped
  • 1 (15-ounce) can crushed tomatoes
  • 1 box Schär gluten-free penne
  • ½ cup grated parmesan
  • ¼ cup fresh chopped parsley

Instructions

  1. Heat the oil in a large skillet over medium heat.
  2. Add the anchovies, garlic, chile, oregano, and capers.
  3. Cook for 2-3 minutes, stirring often, until the garlic starts to brown.
  4. Pour in the tomatoes and let simmer for 5 minutes.
  5. Cook the gluten-free pasta to al dente then drain, reserving ½ cup of the cooking liquid.
  6. Add the drained pasta to the skillet along with ¼ cup of cooking liquid.
  7. Toss to combine and cook for 1-2 minutes until tender, adding more of the cooking liquid if needed to loosen the sauce. 
  8. Serve with grated parmesan and fresh parsley to garnish.

5. Lemon White Wine Sauce

Servings: 4

Ingredients

  • 1 box Schär gluten-free pasta
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves minced garlic
  • ½ cup dry white wine
  • 1 Meyer lemon, juiced and zested
  • ¼ cup grated parmesan cheese
  • ¼ cup heavy cream
  • Salt and pepper
  • Fresh basil

Instructions

  1. Cook the pasta to al dente then drain, reserving 1 cup of the cooking liquid.
  2. Toss the cooked pasta with olive oil then set aside.
  3. Melt the butter in a deep skillet then add the garlic and cook for 2-3 minutes until the garlic is golden brown.
  4. Pour in the wine and lemon juice then simmer for 3-4 minutes.
  5. Whisk in the reserved cooking liquid then add the parmesan cheese.
  6. Cook for 1-2 minutes, stirring often, until the parmesan is melted.
  7. Whisk in the heavy cream and lemon zest then simmer for 1 minute.
  8. Add the cooked pasta to the sauce and toss to coat.
  9. Season with salt and pepper to taste then garnish with basil to serve.
