Bread Pudding Using Muffins
Ingredients:
- Two packages Schär Gluten-Free Classic Muffins
- 1 ½ cups seedless raisins
- 1 ½ cups golden raisins
- 1 tablespoon ground cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon ground nutmeg
- 1 ½ cups milk
- ½ cup heavy cream
- 1 large egg, beaten
- ½ cup brown sugar, packed
- ½ cup butter, melted
Instructions:
- Chop or tear the muffins into pieces and place them in a large mixing bowl.
- Add the raisins and spices, mixing them in by hand.
- Pour in the milk and cream, stirring until the muffin pieces are fully saturated.
- Stir in the egg and sugar until well combined then let soak for 15 minutes.
- Fold in the melted butter then transfer the mixture to a greased 8-inch baking pan.
- Bake in the oven preheated to 350°F for 90 minutes—cover with foil if it browns too quickly.
- Let cool for 10 minutes before turning out onto a wire rack to cool completely.
Breakfast Trifle with Muffins
Ingredients:
- 1 pint fresh strawberries, sliced
- 2 pints fresh blueberries
- ¼ teaspoon salt
- 5 tablespoons maple syrup, divided
- 1 cup heavy cream, cold
- 2 cups plain Greek yogurt
- 2 packages Schär Gluten-Free Muffins (any flavor)
- 2 cups crunchy granola
- 3 ripe bananas, sliced
Instructions:
- Toss the strawberries, blueberries, and salt with 2 tablespoons maple syrup in a medium bowl.
- Let rest for 10 minutes, stirring occasionally.
- In a large mixing bowl, beat the heavy cream to stiff peaks.
- Fold in the yogurt, vanilla, and the remaining maple syrup then beat until well combined.
- Cover the bowl and chill until ready to use.
