1. Honeyed Ham and Cheese Breakfast Pastries

Servings: 2

Ingredients

  • 3 tablespoons spicy mustard
  • 1 tablespoon honey
  • Gluten-free flour
  • 1 package Schär Puff Pastry Dough
  • 4 ounces thinly sliced ham
  • 2 ounces sliced ham (like Gruyere or Havarti)
  • 1 large egg
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 425°F and line two baking sheets with parchment paper.
  2. In a small bowl, stir together the mustard and honey.
  3. On a flat surface lightly dusted with gluten-free flour, unfold the puff pastry sheets.
  4. Roll each sheet into a rectangle 12 inches tall by 15 inches wide.
  5. Transfer the rectangles to the prepared baking sheets.
  6. Spread the honey mustard mixture evenly over the bottom half of each rectangle, leaving a ½-inch border.
  7. Add layers of ham and cheese, keeping the ½-inch border.
  8. Whisk together the egg and water in a small bowl.
  9. Brush the edges of each pastry rectangle with the egg wash then fold lengthwise to cover the filling.
  10. Crimp the edges by hand or using a fork to seal the pastry.
  11. Brush the top of each pastry with egg wash then cut 5-6 diagonal slits in the top of each.
  12. Bake for 20-25 minutes until the pastries are golden brown, rotating the baking sheets after about 10 minutes.
  13. Remove the baking sheets from the oven and let cool for 5 minutes.
  14. Transfer the pastries to a cutting board and cut into slices to serve.

2. Croque Madame Sandwiches

Servings: 2

Ingredients

  • 4 tablespoons butter, divided
  • 4 slices Schär Deli Style Bread
  • 1 tablespoon gluten-free flour
  • ¾ cup whole milk
  • 1 cup shredded Gruyere cheese, divided
  • Salt and pepper to taste
  • ¼ teaspoon ground nutmeg
  • 3 ounces thinly sliced ham
  • 1 tablespoon Dijon mustard
  • 2 large eggs
  • Fresh chopped chives 

Instructions

  1. Preheat the broiler in your oven to high heat.
  2. Spread 1 tablespoon of butter on one side of each bread slice.
  3. Heat a large nonstick skillet over medium-high heat then add the bread, buttered side down.
  4. Cook for 2-4 minutes until toasted then remove to a cutting board and wipe the skillet clean.
  5. In a small saucepan, melt 1 tablespoon of butter until it foams.
  6. Whisk in the gluten-free flour and cook for 60-90 seconds, stirring constantly.
  7. Slowly whisk in the milk then bring to a simmer.
  8. Reduce the heat to low and cook until thickened, about 2-3 minutes, whisking constantly. Remove from heat then stir in ¼ cup of the shredded cheese until melted.
  9. Season with salt, pepper, and nutmeg.
  10. Place two slices of bread toasted side down on a work surface.
  11. Spread about 2 tablespoons of the sauce over each slice then sprinkle with ¼ cup shredded cheese and top with 2 slices of ham.
  12. Spread mustard on the remaining two slices of bread and add to the top of the sandwich.
  13. Add the rest of the sauce to the top of the sandwiches, finishing with the remaining shredded cheese.
  14. Place the sandwiches on a rimmed baking sheet and broil until the cheese melts, about 5-7 minutes. 
  15. Meanwhile, melt the rest of the butter in the skillet over medium-high heat.
  16. Crack the eggs into the skillet and cook until the whites are set, about 3 minutes.
  17. Top each sandwich with a fried egg to serve and garnish with chives. 

3. Rosemary White Wine Chicken with Pasta

Servings: 2

Ingredients: 

  • 2 boneless, skinless chicken breasts
  • Salt and pepper
  • ½ cup plus 1 tablespoon olive oil, divided
  • 1 cup sliced mushrooms
  • 1 medium shallot, thinly sliced
  • 5 cloves minced garlic
  • ½ cup white wine
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh minced rosemary
  • 1 box Schär Gluten-Free Fusilli 

Instructions: 

  1. Preheat the oven to 350°F. 
  2. Season the chicken breasts with salt and pepper then place them in a shallow baking dish.
  3. Heat 1 tablespoons of oil in a medium skillet over medium heat.
  4. When hot, add the mushrooms and shallots—season with salt and pepper.
  5. Sauté for 4-5 minutes until the shallots begin to soften.
  6. Stir in the garlic and cook for 1-2 minutes until fragrant.
  7. Remove from heat and stir in the white wine, lemon juice, and rosemary.
  8. Spoon the mixture over the chicken breasts then cover the dish with foil.
  9. Bake for 30 minutes while bringing a pot of salted water to boil.
  10. After 30 minutes, remove the foil and bake for another 10 minutes until the chicken is no longer pink. 
  11. Add the gluten-free pasta to the boiling water and cook to al dente, about 9-11 minutes. 
  12. Drain the pasta and serve with the chicken, topped with the mushroom mixture.
  13. Garnish with fresh rosemary to serve. 

4. Grilled Spinach-Stuffed Beef Tenderloin

Servings: 8-10

Ingredients

  • ¼ cup butter
  • 1 medium sweet onion, diced
  • 2 cups sliced mushrooms
  • ½ cup Schär Bread Crumbs
  • 3 cloves minced garlic
  • Salt and pepper
  • 1 (5-pound) beef tenderloin, butterflied
  • Butcher string

Instructions

  1. Melt the butter in a large skillet over medium-high heat.
  2. Add the onion and cook until softened, about 4-5 minutes.
  3. Stir in the mushrooms and cook for 6-7 minutes until browned, stirring occasionally. 
  4. Add the spinach, breadcrumbs, and garlic then cook for 2-3 minutes until the spinach is just wilted.
  5. Remove from heat and season with salt and pepper to taste.
  6. Lay the beef tenderloin out flat and season generously with salt and pepper.
  7. Spread the spinach mixture over the beef, spreading it evenly with a ½-inch border all the way around.
  8. Roll the tenderloin as tightly as possible and tie with butcher string at 1-inch interval. 
  9. Season the outside of the roll with salt and pepper and let rest for 45 minutes.
  10. Light a charcoal grill and give the charcoal time to burn down.
  11. When covered with ash, move the coals to one side of grill and set an oiled cooking grate in place.
  12. Place the tenderloin on the cool side of the grill and cook, covered, until the internal temperature reads 120°F.
  13. Move the tenderloin to the hot side of the grill and cook for 2-3 minutes on each side until evenly browned.
  14. Remove the tenderloin to a cutting board to rest for 15 minutes.
  15. Cut the strings and slice the tenderloin to serve. 

5. Tiramisu Ice Cream Cake

Servings: 12-16

Ingredients

  • 1 box Schar Ladyfingers 
  • 3 cups vanilla bean ice cream
  • 2 cups hot fudge ice cream topping
  • 1 cup crushed toffee pieces
  • 3 cups chocolate ice cream
  • 3 cups coffee ice cream

Instructions

  1. Grease a 9-inch springform pan with cooking spray.
  2. Arrange the gluten-free ladyfingers around the edge and press some into the bottom.
  3. Let the ice cream soften to a spreadable consistency.
  4. Spread the vanilla ice cream over the ladyfingers and top with 1/3 of the fudge and toffee pieces.
  5. Freeze for 20 minutes until firm.
  6. Spread the chocolate ice cream into the pan and add another 1/3 of the fudge and toffee.
  7. Freeze for 20 minutes then repeat the layers with the coffee ice cream and remaining fudge and toffee. 
  8. Freeze until firm before serving.
