  • 1 pound ground pork
  • 2 tablespoons sesame oil
  • 1 medium yellow onion, diced

  • 1 teaspoon fresh grated ginger
  • 1 (12-ounce) bag coleslaw mix
  • 1 tablespoon apple cider vinegar
  • 3 tablespoons gluten-free soy sauce
  • Green onion, to garnish

Instructions

  1. Brown the ground pork in a large skillet over medium heat and season with salt and pepper.
  2. Remove the pork to a bowl and discard the fat. 
  3. Add the sesame oil to the skillet and reheat it over medium heat.
  4. Sauté the onion with the garlic and ginger until the onion is softened.
  5. Stir in the remaining ingredients and cook for 4-5 minutes until the veggies are tender.
  6. Add the pork back to the skillet and cook for a minute or so to reheat.
  7. Spoon into a bowl and top with sliced green onions to serve.

2. Baked Coconut Shrimp

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. Spread the coconut chips on the baking sheet and bake for 5 minutes.
  3. Stir the coconut and rotate the pan then bake until golden, another 4-5 minutes.
  4. Crush the toasted coconut and transfer it to a shallow bowl.
  5. Mix the coconut with the gluten-free breadcrumbs and set aside.
  6. In another shallow bowl, combine the Schar Mix It Universal with the salt and pepper.
  7. Whisk the eggs with a tablespoon of milk in a third shallow dish.
  8. Working one at a time, dip each shrimp in the flour mixture followed by the egg wash, shaking off the excess.

  10. Let the shrimp rest for 10 minutes while you increase the oven temperature to 375°F.

3. Slow Cooker Taco Soup

Ingredients

  • 1 ½ pounds ground beef
  • 1 tablespoon chili powder
  • ½ tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon cayenne (optional)
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic salt
  • 2 cups chicken broth
  • 2 (10-ounce) cans diced tomatoes and chiles
  • 1 cup chopped sweet potato or butternut squash
  • 1 (15-ounce) can lentils, rinsed and drained
  • 1 (15-ounce) can whole kernel corn, drained
  • 1 medium red pepper, chopped
  • 1 jalapeno, seeded and chopped

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat.
  2. Drain the fat then stir in the spices and transfer the beef to a slow cooker.
  3. Add the remaining ingredients except for the garnishes and stir well.
  4. Cover and cook on low heat for 5-6 hours or on high for 4 hours. 
  5. Serve topped with your favorite taco garnishes like sour cream, shredded cheese, and sliced green onion.

  3. Carefully slice the chicken breasts in half lengthwise and brush with melted butter.
  4. Dip the chicken in the breadcrumb mixture and place on the baking sheet.
