Chocolate Whoopies with berries

An original alternative to the famous cupcakes. Whoopies are little cakes made of two layers of sponges filled with cream and covered with a soft chocolate icing.  Enjoy with a coffee together with friends. They are sure to be a hit.

Ingredients:

For the dough:
200 g
eggs
2
butter
100 g
sugar
4 tb(sp)
chocolate
90 g
For the filling:
cream
150 g
forest fruits (blackberries, raspberries, strawberries)
200 g
sugar
2 tb(sp)
water
100 ml
vanilla pudding
1 package
For the icing:
chocolate
100 g
chocolate crème
1 tb(sp)
oil
2 tb(sp)

Preparation

For the filling:

  • Put the berries into a pan with water and sugar and cook over a medium heat.
  • Drain off a little cooking liquid into a glass and set aside. 
  • Add the mousse preparation to the liquid, mix well and add this to the berry fruits.
  • Bring it to the boil, mixing well until the sauce has thickened.  Let cool for 15 minutes.  
  • In the meantime, beat the cream until stiff.
  • Add the cream to the berry fruits sauce when it is cold.

For the pastry:

  • Separate the eggs.
  • Beat the yolk with butter and sugar.
  • Beat the egg whites until stiff and set aside.
  • Add the grated chocolate to the egg and butter mix.
  • Add the flour and the whites alternatively.
  • Use a piping or a freezer bag to spread little mountains of the mix on a baking tray covered with oven paper. Leave sufficient space between each cake. 
  • Cook in a pre-heated oven at 220° for 10 minutes. 

For the icing:

  • Warm the chocolate, the chocolate cream and the oil in a bain-marie.
  • When the cakes are cold, spread one with cream and place another on top.
  • Cover with icing and serve.
