Beetroot Booster Vegan Sandwich

Beetroot Booster

A delicious vegan sandwich filling to go perfectly with our Deli Style Seeded.


For the Beetroot Hummus:
400 g chickpeas, drained and rinsed
250 g beetroot, cooked
1/2 tsp salt
juice of a half lemon
2 tbsp tahini
2 tsp cumin
100 ml extra virgin olive oil
For the Sandwich:
2 slices Deli Style Seeded
1/2 cucumber
1 handful cherry tomatoes
1 handful rocket leaves


  • Place all of the hummus ingredients into the liquidiser and blend until smooth.
  • Spiralizer the cucumber.
  • Rinse leaves and tomatoes, then slice cherry tomatoes in half.
  • Lie your bread on the bread board and put a spoonful of beetroot hummus and spread on each slice.
  • Top with leaves, cherry tomatoes and cucumber spirals.
