Vegan and gluten free?

Meat, milk and eggs are off the menu you say? It can be tricky to have a varied gluten free vegan diet, here’s some tips and super speedy sandwich fillings.



A vegan friendly combination of turmeric chickpeas, leaves and tomatoes to make for a really fresh tasting sandwich. Chickpeas have many great health benefits, in a not so nutshell chickpeas can boast the below;

  • Aid the control of blood sugar levels
  • Rich in fibre to help digestion
  • Keeps you fuller for longer
  • Easier on the purse strings

We cannot overlook the cruel reality that a chickpea served solo is quite a boring affair, the secret ingredients to spice up this sandwich filling is the addition of lemon, garlic, olive oil and a spoon of turmeric. Speed up prep time using a cooking aid.

TLT Ingredients

Turmeric chickpeas

  • 1 x can chickpeas
  • Juice of 1 lemon
  • Dash of olive oil
  • Garlic
  • Turmeric


  • Handful of leaves; rocket, kale or simply lettuce
  • 1 large tomato

The beetroot booster

The sandwich is ideal if you love beetroot and the colour pink; after a quick office vote we were surprised to see that this applied to many of the staff here at Schär HQ. Again, this flavoursome combination packs a real punch and looks really colourful, beetroot hummus can be purchased ready-made for ease or by blending beetroot, chickpeas and yogurt, season as desired with an optional addition of lemon juice.

      V cheese-like toasties

      This vegan friendly melt in the mouth toastie uses Tesco’s free from cheese, a fabulous alternative which goes great with caramelised onions!

      • Caramelised onions; slices of red onion fried with balsamic vinegar
      • Optional; kale or leaves

      Avocado mash up

      As Italians we couldn’t have a sandwich shortlist without the addition of olives, for the final vegan sandwich filling we’ve spread the slices with black olive tapenade, topped with a delicious blend of avocado, lemon juice and chilli flakes, polished off with chopped chives – just wow.
