Fresh South Tyrolean apples, delicious pastry, chopped nuts and pine nuts are the ingredients that are anything but secret in the authentic South Tyrolean apple strudel. Even more delicious just out of the oven.

Ingredients

For the dough:
250 g
125 g
sugar
125 g
butter
1
egg
a little bit of
grated lemon peel
For the filling:

apples
30 g
minced dried fruit
30 g
sugar
1 pinch/es of
cinnamon powder
15 g
sultanas
15 g
pine nuts
1 tbsp
rum

Preparation

  • Place the flour on the work surface. Into the centre, pour sugar, butter, egg and lemon zest. Mix everything with your hands, quickly.
  • Form a roll and let sit in the refrigerator for about 30 min, covered with plastic wrap.

For the filling:

  • Peel the apples, remove the seeds, cut them into eight pieces and then thin slices. Add them to the remaining ingredients and set aside.
  • Roll out the dough with a rolling pin into a rectangle (40 x 25 cm) from 3 to 5 mm in thickness and place it carefully on a baking sheet covered with oven parchment.
  • Spread the filling on the dough, brush the edges of the dough with the egg yolk, close the strudel and let sit in the refrigerator for 1/2 hour.
  • Spread the mixture of egg yolk and cream on the strudel. Bake in a preheated oven at 180° C for about 25 min.
