Ingredients

500 g
1 1/2 tsp
salt
30 g
butter
20 g
brewers' yeast
650 ml
lukewarm water
150 ml
lukewarm milk
2
eggs
a little bit of
coarse salt
1 pinch/es of
dextrose
50 g
bicarbonate of soda

Preparation

  • Sieve the flour into a bowl, make a well in the middle and crumble the yeast into the well.
  • Sprinkle the sugar onto the yeast then stir to a starter dough with 150 ml lukewarm milk and a little flour. Cover and leave to rise in a warm place for 10 minutes.
  • Meanwhile prepare the brine by boiling water, salt and bicarbonate of soda in a pan. Put the brine to one side to cool.
  • Add all remaining ingredients to the starter dough, gradually stirring in the liquid. The dough should be smooth, silky and pliable.
  • Divide the dough into 8 equal parts and form into sticks or pretzel shapes. Dip the shapes into the brine using a slotted spoon, then lay them on a baking tray lined with greaseproof paper and sprinkle them with coarse salt.
  • Cover and leave to rise in a warm place for 30 minutes. Meanwhile preheat the oven to 200 °C. Bake the pretzels for approx. 20 minutes until golden brown.
