Gingerbread cookies

When the house is perfumed with almonds, walnuts, marzipan, and oranges, then Christmas can’t be far ahead! The spicy gingerbread is best when decorated with a sugar or chocolate glaze!

Ingredients

candied citron peel

marzipan

Preparation

  • Beat the eggs thoroughly with the sugar; grate the marzipan thickly, add the Lebkuchen spices, the candied orange and lime rind and mix well.  
  • Then stir in the walnuts, almonds, yeast and flour.
  • With the aid of two teaspoons or an ice-cream scoop, place small quantities of the dough on a tray lined with oven paper.  
  • Leave enough space between the balls so that they don't overlap when cooking.  
  • Cook in a preheated oven at 190°C for 25-30 minutes (upper and lower heat, middle shelf).  
  • Once the Lebkuchen have cooled they can be iced as you wish, with chocolate or icing. 
  • Suggestion:  You can also add the finely sliced rind of candied orange or candied lime to the dough.
