Preparation

  • Soak the rolls in milk.
  • Cut the aubergines into slices and boil for 20 minutes in salted water, then drain and chop up.
  • Squeeze the rolls and break them up, then mix in a bowl with the aubergines, parsley, oregano, the peeled and mashed potato, and the grated cheese. Add the eggs and season to taste with salt and pepper.
  • With flour-coated hands, form small oval balls and roll them in the breadcrumbs.
  • Fry in plenty of oil.
