A balanced cholesterol level is the best protection against cardio-circulatory disease. The right quantity of fibre allows us to keep control of the level of cholesterol in the blood. To do this you should eat the correct quantity of high-quality carbohydrates. Cereals, wholemeal foods, fruit, vegetables and legumes are particularly good. Fibre also has a beneficial effect on digestion. Sport, moderate alcohol consumption and no smoking are other ways to reduce cholesterol. You should also reduce animal-based foods, those rich in saturated fats, desserts and cakes. It seems a lot to give up, but you'll see that following a fibre-rich and low cholesterol diet with our recipes is no real sacrifice. Anything but!
