Roasted Cauliflower Chickpea Salad with Feta and Herby Dressing

This easy and super delicious salad is naturally gluten free and rich in flavors. Roasting makes everything better!

Ingredients

300 g chickpeas
1 cauliflower
2 tbsp olive oil
1/2 tsp salt
150 g feta cheese
For the sauce:
2 tbsp olive oil
2 tbsp whole grain mustard
2 tbsp lemon juice
1 tsp lemon zest
2 tsp sugar
1 handful parsley, chopped
For the decoration:
parsley

Preparation

  • Heat the oven to 200 degrees.
  • Brake the cauliflower into florets.
  • Drain the chickpeas.
  • Toss the cauliflower and chickpeas with some olive oil, season with salt and roast for 10 minutes.
  • Add feta cheese and roast for 10 more minutes.
  • Let it cool down for 20 – 30 minutes.
  • Brake the feta cheese into crumbles.
  • Prepare the dressing and mix with the salad.
  • Decorate with parsley leaves.
