Quinoa tabbouleh salad is a naturally gluten free salad full of green power and taste.

Ingredients

100 g quinoa
200 ml water
1 pinch/es of salt
100 g cucumber
200 g cherry tomatoes
2 handful parsley
1 handful mint leaves
2-3 tbsp lemon juice
to taste salt

Preparation

  • Rinse the quinoa well under hot water.
  • Boil the slightly salted water.
  • Add the quinoa and boil until tender (about 15 minutes).
  • Let cool for a while.
  • Chop up cucumber, tomatoes and herbs.
  • Combine quinoa, vegetables and herbs.
  • Season with salt and lemon juice.
