Plum cake



220 g Mix C - Mix Pâtisserie
100 g sugar
200 g butter
1 egg
1/2 package baking powder
1/2 tsp xanthan gum
1 kg plums
2 tbsp pearl sugar


  • Mix the flour, sugar, yeast, xanthan gum and salt in a bowl. 
  • Add the butter and egg, work with cold hands, to form a smooth dough. 
  • Line a cake tin (standard or spring base) with the dough, forming a small border at the sides. 
  • Let the dough rest in the tin for 30 minutes.
  • In the meantime wash the plums, remove the stones and cut them into pieces, leaving the bottom section whole. 
  • Pierce the dough with a fork, arrange the prunes on the base, forming a rosette design.
  • Cook in the middle of a pre-heated oven.
  • Once cold, sprinkle the cake with grain sugar.
