Life is like nachos. Just pour the best toppings on them!

Ingredients

3 tomatoes
1 shallot
200 g black beans, tinned
1 pinch/es of salt
1 pinch/es of black pepper
200 g nachos
1 handful matured cheddar cheese, grated
1 handful coriander leaves
1 avocado
2-3 lime wedges

Preparation

  • Heat the oven to 200°C.
  • Chop the tomatoes and shallot.
  • Drain the beans.
  • Mix beans, shallot and half of the tomato cubes. Season with salt and pepper.
  • Spread the nachos on an oven proofed baking tray.
  • Pour the bean-tomato-mix all over.
  • Spread the grated cheddar cheese.
  • Bake for 10 minutes or until the cheese is melted.
  • Serve with fresh tomato cubes, coriander, avocado and lime slices.
