An invitation from France! A real temptation: the Madeleine.


For the dough:
80 g Mix C - Mix Pâtisserie
150 g butter
1 tbsp wild honey
100 g almond flour
200 g icing sugar
4 egg white


  • Preheat the oven to 180°C and grease a Madeleine tray and dust with flour. 
  • Combine butter and honey thoroughly in a bowl before melting gently on the hob. The mixture should be golden brown.
  • Add the almonds, icing sugar and sieved flour, followed by the melted butter and unbeaten egg white.
  • Carefully combine all the ingredients until uniform, then spoon equal quantities into the Madeleine tray and bake for approx. 20 mins.
