Healthy Walnut and Chocolate Pie

A healthy and balanced dessert choice for those of us who are health-conscious but still have a sweet tooth! Recipe by Ana Paula Ruiz Pessenda.

Ingredients

For the cream:
1 cup walnuts
1 package Digestive Choc
1/2 cup coconut milk
1/2 cup cocoa powder
3/4 cup coconut sugar
3 tbsp honey
2 tbsp green banana mash
2 eggs
Optional:
30 ml cognac
For the topping:
1/2 cup coconut milk
1/2 cup coconut sugar
1/4 cup cocoa powder
For the decoration:
to taste Digestive Choc
walnuts

Preparation

Cream:

  • Break the walnuts and biscuits in a bowl and set aside.
  • Mix the coconut milk with the cocoa powder, coconut sugar, honey, green banana mash and eggs in a pot over a low heat.
  • Mix well, stir until you obtain a creamy texture.
  • Add cognac and turn off the heat.
  • Wait for it to cool off a bit slightly, then mix in the walnuts and biscuits prepared earlier.
  • Mix everything and set aside for assembly.

Topping:

  • In a small pot, put the coconut milk, coconut sugar and cocoa powder.
  • Cook over a medium heat and stir until it achieves a slightly thick consistency.
  • Turn off the heat and set aside for assembly.

Assembly:

  • In a bowl, spread the biscuit mix on the sides.
  • In the middle put the cream and layer it with the topping.
  • Decorate with walnuts and return to refrigerator for about 3 hours.
  • Serve.
