Aubergine croquettes

Do you feel like a different side dish today? How do crisp aubergine croquettes sound?

Ingredients

2 Panini Rolls
or
2 Ciabattine / Ciabatta
100 g Paniermehl - Breadcrumbs
200 ml milk
1 tbsp parsley
1/2 tbsp oregano
1 clove of garlic
1 boiled potato
2 eggs
2 g Parmesan cheese
salt
pepper
2 large aubergines

Preparation

  • Soak the rolls in milk.
  • Cut the aubergines into slices and boil for 20 minutes in salted water, then drain and chop up.
  • Squeeze the rolls and break them up, then mix in a bowl with the aubergines, parsley, oregano, the peeled and mashed potato, and the grated cheese.
  • Add the eggs and season to taste with salt and pepper.
  • With flour-coated hands, form small oval balls and roll them in the breadcrumbs.
  • Fry in plenty of oil.
